You can find the volume mapping at docker-compose files for each container. However I have no experience on how it is mapped to Windows + Git Bash.

I just take a look on Hyperledger Fabric document and it seems Windows 10 need working with Powershell. Again i have no experience on it.

To avoid additional hiccups, I would suggest you first try using VirtualBox or a cloud Ubuntu instance to play around Hyperledger Fabric. You can google and will find a lot of good documents describing how.
